  • 1/2-1 pack of soy chorizo
  • Can of chili or black beans
  • 1 cup fresh or frozen corn
  • 1/2-1 red pepper
  • Handful of spinach
  • 1 tbsp ketchup (smoked works best)
  • 1 tbsp maple syrup
  • 1 tsp cumin
  • 1-2 tbsp chili powder
  • 1 tbsp garlic powder
  • 1/2 cup diced onion (any color works)
  • 1 can fire-roasted tomatoes (diced tomatoes works as well)
  • Step 1 In a large pot combine all vegetables
  • Step 2 Bring to a boil
  • Step 3 Reduce to a simmer then add spices
  • Step 4 After about 5 minutes add soyrizo and heat until warm
  • Step 5 Let cook for as long as you prefer, the longer the better flavored
  • Step 6 Serve with cashew sour cream or guacamole on top
